Small farmers are disappearing, and this is one of our greatest losses. When you buy from your local farmer, you're buying from someone who still knows the names of their animals, who rises with the sun and who farms without shortcuts, chemicals, or compromise. You're not only getting more nutrients but helping support those who have fed us for generations.

Eat nose to tail
This is the way our bodies evolved to eat, and yet we lost it in less than 50 years. Organs, bones, connective tissue, once sacred, now discarded. Thrown away, forgotten, or feared.
