  • Saturated fats have no double bonds. They're stable, don't oxidise easily, and can handle heat without breaking down into toxic compounds. This is why traditional cultures used butter, tallow, lard, ghee, and coconut oil for cooking.

If saturated fat were the primary driver of these conditions, trends should have moved in the opposite direction.
