I have known David for maybe 8 years now (time flies!). He has quite simply reconciled me with milk. I had stopped drinking it after the teenage breakfast-cereal phase a whole generation seems to have been pushed through, only for sheer lack of interest due to a very bland taste of the processed milk found in stores. A few years after settling in Northern Ireland, I was told of a man selling organic raw milk he produced: a milk that would have undergone no processing of any kind (no homogenisation, no pasteurisation), straight from the cow to the consumer... I was curious! This sounded like, after all, the kind of milk my grandparents drank on the farm, and they did pretty well...! Meeting David for the first time and buying a bottle 'to give it a try' was a game changer: I could for the first time enjoy a simple glass of fresh milk on its own. What is more, it felt actually nourishing and satisfying! I went on to try making milk kefir with David's product, and it worked like a charm, giving a most creamy and nutritious drink after a few days of fermentation. David took up organic raw milk production from his father, and I am very pleased to see his son, Andrew, in turn taking it up. They have fought the fight to keep raw milk alive and available to the mere consumers that we are. They take great care of their herd, and it shows! Thank God for the Laughlins!
