Mark, born in Ireland, and Oksana, born in Ukraine, farm with an old world heart: healthy grass first, well cared for animals, and work done by hand. Their Jersey cows give naturally rich A2A2 raw milk, which becomes heavy cream, butter, kefir, yogurt, cottage cheese, clotted cream and farmhouse cheese in small batches.
Oksana's farmhouse kitchen adds naturally fermented sourdough bread, Irish soda bread and Irish scones, while the hens of the Chicken Village keep the farm supplied with fresh eggs. Everything is made in small quantities and collected at the farm; nothing is shipped, so the farm asks visitors to telephone first to hear what is ready. Families, couples and homeschool groups also come for hands on farm tours, meeting the Jersey girls, gathering eggs and learning why a grass farmer watches soil and pasture so closely.
