Whey Cool Ranch is the Clark family's raw goat dairy on 23 acres of Blackland Prairie in Hunt County, Texas, just outside Celeste.
Jeremiah and Megan Clark raise Nubian dairy goats as browsers rather than grazers, rotating them through diverse pasture of trees, vines and forbs instead of feeding grain heavy rations. The farm works regeneratively: rotational grazing, minimal inputs, and an ongoing project to restore native Blackland Prairie habitat, including a formerly flooded stretch of land transformed into silvopasture.
The milk is Grade A raw, sold by weekly or biweekly subscription at 10 dollars a half gallon or 20 dollars a gallon, with self serve pickup from the front porch fridge on Saturdays from 10am to 12pm and collection points in Leonard and Farmers Branch. The herd is closed, every milking follows a strict sanitation protocol, milk is chilled within an hour of milking, and batches are lab tested monthly with quarterly state testing under the ranch's Grade A permit.
