3 Summer BBQ Recipes - Organised article image

When I was a kid, I remember my mum disappearing into the kitchen for hours before the family summer BBQ. The sound of her dicing up veg, the smell of home cooked food drifting down the hall, was the most comforting feeling. She had her dish and when we got there, everyone else had theirs. A table that somehow always ended up full, covered in things people had made with their own hands.

These days it's easier to grab something pre-made. But the convenience of less work took something with it. Whether you're on meat or sides, I have some easy recipes worth making below.

Three simple dishes: homemade organised beef burgers, a carrot salad that always gets finished first, and seasonal roasted beetroot and courgette. Simple, seasonal, and worth every minute.

Homemade Beef Burgers (serves 4)

  • 500g Welsh grass-fed beef mince
  • 1 egg
  • Good pinch of salt
  • 1 tbsp Organised (optional)
  • Fresh herbs of choice (optional)

Carrot Salad

  • 4 large carrots
  • 2 tbsp coconut oil, melted
  • Splash of apple cider vinegar
  • Pinch of salt

Roasted Beetroot & Courgette

  • 2 medium beetroots
  • 2 courgettes
  • Coconut oil
  • Salt and fresh herbs to finish

 

  1. Add the mince, egg, Organised, and salt to a bowl and mix well until fully combined, I love to use my immersion blender but just using your hands to combine works too. Shape into patties and cook on the BBQ until done to your liking.
  2. For the carrot salad, peel the carrots into ribbons using a vegetable peeler. This is the most tedious part, but crucial to the estrogen binding benefits of the carrot salad, I promise it's worth it! Toss with melted coconut oil, a splash of ACV, and a good pinch of salt.
  3. For the vegetables, preheat your oven to 200°C. Add a generous spoonful of coconut oil to a roasting tray and get it hot. Chop the beetroot into chunks, add to the tray, season well with salt, and roast for 10 minutes. Add the courgette and return to the oven for a further 20 minutes until everything is golden and tender. Finish with fresh herbs!
