They put it into organic conversion in 2004 and have held Irish Organic Association certification since. Vegetables come out of six polytunnels and open fields, and another ten acres is given over to native woodland, red clover and wildlife, with 7,000 trees planted.
Most people meet the farm through its organic boxes, which have gone out since 2006 to Galway, Mayo, Limerick and Dublin, and by courier to the rest of Ireland. You can take a set box or build your own from fruit, vegetables and groceries. The farm shop opens every Saturday from 10am to 5pm for freshly cut produce, zero waste refills and a wander through the polytunnels to see the crop still growing. Laying hens are the heart of it. They live in mobile housing that is moved across pasture so the birds keep regenerating the ground they scratch over, and their eggs are what the farm is known for. Alongside them Brian grows chemical free vegetables in polytunnels and a market garden.
The farm shop is an honesty shop, open from 9am to 9pm every day of the year. It carries the farm's own eggs and seasonal vegetables, raw organic milk from Gleann Bui Farm in Mayo, sourdough from Granum Bakehouse, and goat's cheese, honey, ferments, kombucha, flowers and soap from other local makers. Their aim, in their own words, is to keep the salad on Irish plates Irish and organic. They cut mixed leaves all year, along with rocket, spinach, kale, bok choy, scallions and potatoes, and they carry both the Irish Organic Association and EU organic marks.
It is a small operation: a short team sows, harvests and drives the deliveries itself. The salad goes to restaurants, hotels and food service kitchens, and to SuperValu shops across Galway, Roscommon and Athlone, so it is easy to find locally without a long journey. For seasonal lines such as tomatoes, squash, carrots and potatoes they work with other nearby organic growers.
