Criollo cattle are of Spanish origin, specially adapted to hot, arid country, smaller and lighter framed than traditional beef breeds, and their beef is very tender with fine muscle fibres, low in fat and cholesterol and high in protein and Omega 3s.
Beef is sold direct from the ranch as halves and wholes, with individual cuts available through the outlets listed on the ranch's purchasing page. Halves and wholes do sell out, so contact the ranch to join the wait list, and ask about their brewers grain supplemented beef and pasture boarding while you are at it.
