Cabri Creamery is a petite French style goat dairy at Wellington in northern Colorado, run by Kristin Maxwell, shepherdess and cheesemaker.
Kristin became interested in dairy goats in 2013 and learned the trade at creameries around the United States and in France. She started shepherding her own herd in 2021 with Poudre Valley Community Farms, providing ecological grazing services to the City of Fort Collins, then moved the herd north of Wellington in 2024, where the creamery shares acreage with Here and Now Farm. The herd is small and well known to her: ADGA registered American Alpine does, Nigerian Dwarf bucks and mini Alpines, with access to native pasture from sunrise to sunset all year round. Native grasses and forbs make up a large part of what they browse, which she says lends a gout de terroir to the milk and the cheese.
Milk and cheese are shared through Colorado's herdshare program, which works rather like a dairy CSA. Members hold an interest in the herd and pay a boarding fee, and in return collect a weekly share of raw goat milk, or raw goat milk cheese rotating between chevre, ricotta and yogurt. The 2026 milk shares run July to December and the cheese shares run August to November, collected either from the dairy at Wellington or from On the Vine Farm in Fort Collins, and SNAP and EBT are accepted. Milking does are fed local herbicide free alfalfa hay and a local dairy goat grain alongside their browse. The herd is vaccinated annually for CD&T and tested CAE negative each year, and antibiotics are given only to a seriously ill animal under veterinary direction, with that doe's milk withheld until the prescribed withdrawal date has passed. Visitors of all ages and abilities are invited to come and meet the herd.
