Sustainable Settings is a biodynamic working ranch and learning centre in Carbondale, Colorado, producing grass fed A2 dairy, grass fed beef, heirloom vegetables and herbs.
Sustainable Settings is a working ranch and Whole Systems Learning Center on Highway 133 outside Carbondale, Colorado. Founded by Brook and Rose LeVan, it began in 1997 and has stewarded its historic ranch since 2003 as an entrepreneurial nonprofit advancing regenerative agriculture, soil health and whole systems education. The ranch combines biodynamic practice with organic, no till, permaculture and rotational grazing methods, and points to multi year USDA and NRCS lab results showing significant gains in biological soil health.
The land produces grass fed A2 dairy and beef, heirloom vegetables and herbs, sold from the farm store, which opens Wednesday and Saturday, 11am to 4pm, or by appointment. Around the food runs a full calendar of workshops, from building soil fertility to bee guardianship and animal processing, plus internships and school visits that put students to work on a real farm.
