The recipe came from a retiring cheesemaking couple in Wiltshire, and every batch is still made by hand in the traditional way.
The Ashmore cheeses are made from the unpasteurised milk of British Friesian cows, collected in the dairy's own tanker from nearby Debden Farm in Petham, and Kelly's Canterbury Goat is a hard goat's cheese made with local milk from Ellie's Dairy in Wychling. A growing range of soft cow's, goat's and sheep's cheeses sits alongside them. The cheeses are sold through the online shop, at The Goods Shed in Canterbury, and at open days held at the Dargate dairy.
