Studied dairy science at the University of Wisconsin Madison and apprenticed under Master Cheesemaker Gary Grossen. Came to Uplands in 2007 and took over the creamery from founder Mike Gingrich.
Uplands Cheese is a 300 acre dairy farm and creamery on top of Pleasant Ridge, in the Driftless region of southwestern Wisconsin, owned and run by two families, Andy and Caitlin Hatch and Scott and Liana Mericka.

The Rush Creek Reserve is exceptional! It's a subtle yet distinctive flavor that I have only found in my childhood favorite French Alpine raw cow milk cheese called Reblochon. I enjoy it spread on a piece of fresh French bread and with a dry red wine. Very glad to have found this gem Stateside!
Rebuilding the food system, from the farm up

Note this is a cheese farm/factory, not a retail operation. There’s not even a sign on the highway. Nevertheless, we found it and had a very pleasant visit with the owner and he was gracious enough to let us sample the cheese and sell us a pound. The cheese was exceptional! It’s available at Schurman’s Wisconsin Cheese in Dodgeville, and definitely worth a visit.
