Ian Mernagh's grandfather bought the castle and its farmland in 1920 and the family have worked the land ever since, keeping the wild flowers, the ancient stone walls and the native Irish wild bees that live in them. Ian bought two hives in 2015 and began breeding his own bees. From those first two there are now almost sixty production hives in apiaries across the farm and the surrounding countryside.
The honey is raw and unpasteurised and contains nothing but honey from their own bees. Because the family manage the hives directly, they know exactly which apiary every jar came from. The range shifts with the season and takes in a summer blossom honey and a softset honey, alongside beeswax candles and honey chocolates that Marie and their daughters develop. Tykillen FarmFarm shop · BallyharranTykillen Farm sits at Ballyharran near Crossabeg, a few miles north of Wexford town. It was founded by John and Frances Morris and is now run in partnership with their daughter Ciara Kinsella, a qualified veterinary surgeon, and her husband Liam, so three generations work the same ground. The farm carries just over 100 ewes that lamb in early March and are reared outdoors on clover, carefully selected grazing grasses and herbs. Recently planted multi species swards have cut the farm's reliance on fertiliser, and about fifteen acres are under forestry.
Liam took a beekeeping course in 2019 and the farm now keeps its own hives. The honey carries the taste of the farm's clover, blackberry, wild cherry, wildflower meadow and tree blossom. It is raw and only cold filtered, so the flavour, enzymes, proteins and antioxidants stay in the jar.
