Travis is a fifth generation farmer by lineage, and the pair became first generation farmers in their own right in spring 2016 when they bought pasture near Fullerton, Nebraska, later expanding to their farmplace in Saint Edward and a storefront in Albion. They believe in farming honestly, morally and intentionally, and work with local landowners on soil health, grass seeding and prescription grazing. On the farm they offer small batch raw, unpasteurised milk and raw cream from their family milk cow, Sweetheart, milked, handled and cooled at home and bottled in reusable glass jars on a deposit and exchange system. In accordance with Nebraska law the raw milk and cream are sold only from the farm, picked up on site, with fresh milk daily. The main business is beef, sold as individual cuts, in bulk, and dry aged, alongside fresh eggs.

She and her late husband Christopher bought the farm in 2007 and began milking that November, with two heifers from her parents' herd and a small milking barn Christopher built himself. The family milks year round, so there is fresh, clean flavored milk and cream in every season. The farm is deliberately tiny. The family keeps only as many animals as they can care for properly, milking a few cows and raising pigs on the milk they do not sell, alongside chickens and a big garden. Josie, a food science graduate and certified health coach, uses the farm's website to share honestly what small scale dairying involves, and welcomes anyone who wants to talk cows.

The family keep the operation deliberately small so they can stay hands on with the animals and everything they produce.
  9. 9Shalom FarmsShalom FarmsRaw milk, meat & eggs · LincolnShalom Farms is a small family farm on an acreage between Lincoln and Denton in Nebraska, run by Jeffrey and Lorraine Penner. It began in the spring of 2020, when Jeffrey's parents gave them a miniature donkey called Alvin and the couple built a house on his parents' 23 acre place southwest of Lincoln so they could farm and help care for them. A pair of miniature horses followed, then goats and sheep in 2021. The farm ran as Penner Mini Farms as a hobby until 2024, when the Penners made it a business and renamed it Shalom Farms. Jeffrey grew up on a dairy farm in southwest Nebraska and still works as a computer programmer; Lorraine, who moved to Nebraska from California as a teenager, had no farm experience at all before 2020 and writes about learning it all as she goes. They milk Nubian, Alpine Nubian cross and Mini Nubian dairy goats, plus a registered LaMancha, in a small milking parlour in the barn, and sell the raw goat milk through a herdshare and a direct sales waiting list. Milking season runs from roughly April or May to October rather than all year, because it follows the kids. The same milk goes into their hand made goat milk soap. They keep American Blackbelly hair sheep for 100 percent grass fed lamb, sold whole on a waitlist, and they say they were the first registered breeders of Pineywoods cattle in Nebraska, a small hardy heritage breed they chose because it finishes on grass and hay with no grain. Beef is sold by the half or the whole on hanging weight, processed between 18 and 30 months. Farm fresh eggs are on the list too, and the hay the animals eat, a mixture of grass and legumes, is grown on the farm. Orders are collected at the farm or at a pick up point at 70th and Highway 2.
