Ingredients

• 200g dried apricots
• 1/2 cup desiccated coconut + extra for dusting
• The zest of 1 organic lemon
• 1 heaped tbsp ghee
• 2 tbsp Organised
• 1 tsp vanilla bean paste 

Method

1. Add all the ingredients to a food processor and blitz for about a minute until you have a sticky paste when pressed between your fingers.
2. Using your hands shape the mixture into small balls and dust them with some extra coconut.
3. Enjoy straight away out store in an airtight container in the fridge for 7-10 days.
