The best farms

  1. 1Hidden Hills Farm & Saddle ClubHidden Hills Farm & Saddle ClubRaw milk & eggs · McDonald4.9 (159 reviews)Hidden Hills Farm and Saddle Club is a 200 acre family farm tucked into the hills of southeast Tennessee, a short drive from Chattanooga. It is a husband, wife and two kid operation with help from contract staff, centred on the love of horses: boarding, riding lessons, guided trail rides, summer camps, birthday parties and a farm guesthouse for overnight stays. Behind all of that sits a small dairy. The family milks once a day into a stainless steel jug, then filters the milk straight into clean glass jars and refrigerates it. In their own words, nothing is taken out and nothing is added. Some of the cows are A2A2 and the milk is labelled by cow, so members can ask which one to look for. Tennessee only lets people buy raw milk if they own part of the herd, so the milk goes out as a herdshare: a signed agreement, a $20 buy in fee and a case of six mason jars, then collection from Grindstone Gardens, the neighbouring farm market at the corner of McDonald Road and Pine Hill Road. Heavy cream is sold alongside the milk, with butter, cheese or ice cream now and then. The farm also keeps over 50 free range hens, bales its own hay across more than 100 acres of pastureland, gardens an acre mostly for the family table, and sends any spare eggs or garden produce down to Grindstone Gardens with the milk. Cows are given a grain ration at milking time to cover the calories milk costs them, and antibiotics only as needed after natural remedies are tried first, always following the recommended milk withdrawal period.

Their Jersey cows move to fresh pasture through rotational grazing, chickens follow behind in mobile pasture systems, and the pigs spend much of their lives rooting and foraging in wooded paddocks. The main offer is fresh raw A2/A2 milk, sold through herd shares from their grass fed cows. Alongside it the farm sells forest raised pork by the share in season, naturally raised piglets, and eggs from chickens kept on pasture with access to natural forage. Jarrett and Dianne also run farm tours and education sessions on rotational grazing, pasture systems and regenerative practice. Days here begin with milking, then feeding the pigs and chickens, checking fencing and moving animals onto fresh grass, and in summer they make their own butter and cheese.

  • 19Bonnie Blue FarmBonnie Blue FarmRaw milk & eggs · WaynesboroBonnie Blue Farm is a Grade A licensed goat and cow dairy in Middle Tennessee, just south of Waynesboro, established in 2006. Jim and Gayle Tanner breed Saanen and Nubian dairy goats and milk Jersey cows, and feed a non GMO ration. The cave that ages the cheese was blasted out of the side of a hill on the farm itself, and every wheel that comes out of it is raw milk: Tanasi Tomme and Parker from raw goats milk, Mooleen and Shiloh from raw Jersey cows milk, and a cheddar style wheel that blends the two and ages for three months. Alongside the cave aged wheels the farm makes fresh cheeses from pasteurised goats milk, including an award winning whipped chevre in five flavours, a brined feta, and a bloomy rind Great Pyr made with vegetable ash. Goat milk, kefir, kefir grains and eggs are sold direct from the farm, and the Tanners sometimes offer Saanen and Nubian does, bucks and kids for sale. There is no shop with set hours. Everything is preordered by phone or email and collected at the farm.
  • 20Hickory Cove Orchards and Blueberry DairyHickory Cove Orchards and Blueberry DairyRaw milk, fruit, veg & eggs · RogersvilleHickory Cove Orchards is a family owned, USDA certified organic farm in the hills of northeast Tennessee, near Rogersville. Philip and Linda Hopkins retired from busy careers in medicine in 2015 to farm full time, and what began as a humble six tree family apple orchard is now a five acre working farm of certified organic apple and blueberry orchards alongside free range chickens, rabbits, pigs and goats. They grow without synthetic chemicals or pesticides, and write that building healthy soil to produce healthy plants is part of the legacy they want to leave. What they grow is sold locally, collected at the farm by arrangement or picked up from their stall at the Market Square Farmers Market in Knoxville. The dairy side of the farm, Blueberry Dairy, is built on a herd of Nigerian Dwarf goats. In the farm's own words, direct sale of raw milk is not legal in Tennessee but the sale of herd shares is allowed, so buying an interest in the dairy herd entitles the shareholder to a proportionate share of the milk it produces. The farm describes it as a cooperative agreement in which the shareholders share all the benefits and risks of ownership. The milk is taken daily and bottled on the farm with no pasteurisation and no additives. Kids are dam raised whenever the farm can manage it, and a single goat is only sold to a buyer who already keeps one, because goats are herd animals and do not thrive alone.
